Mediterranean Chicken

Tender pan-fried chicken is tossed with a Mediterranean style vegetables.

 Ingredients

1 tablespoon plain flour
1 tablespoons olive oil
3-4 skinless chicken breast fillets, each cut into 3 diagonal slices
1 onion, peeled and cut into wedges
1 clove garlic, peeled and crushed
1 teaspoon chopped fresh red chilli
1 small zucchini, sliced
1 red capsicum, cut into diagonal pieces
8-10 frozen baby beans
400g can diced tomatoes, undrained
400g can butter beans, drained
1 cup baby spinach leaves
Chopped fresh parsley for garnish

 Instructions

Step 1

Coat chicken lightly in plain flour. Heat oil in a frying pan, add chicken and cook for 4-5 minutes or until browned. Remove from pan and set aside.

Step 2

Add onion, garlic, chilli, zucchini, capsicum and frozen baby beans to pan and cook for 2-3 minutes or until tender.

Step 3

Stir in undrained tomatoes and drained butter beans. Return chicken to pan, cover and simmer for 10 minutes. Add spinach leaves and heat until leaves begin to wilt. Serve sprinkled with parsley.

Recipe tip

The chicken can be omitted for a perfect vegetarian alternative.
